Prep Cook
The Prep Cook position is a member of the Food & Beverage production team, supporting the Culinary Team in the execution of concession operations and banquet functions. The Prep Cook works directly with the Sous Chef, Food & Beverage Manager and Culinary Team to ensures that all food items are produced in a timely manner according to specified recipes. The Prep Cook demonstrates knowledge in food preparation and presentation, kitchen safety, sanitation and customer service.
Qualifications

Qualifications
- Knowledge of culinary techniques and practices.
- Knowledge of and ability to exercise creativity in food presentation and idea generation
- Knowledge of supplies, equipment, and/or services ordering and inventory control.
- Knowledge of and ability to exercise excellent customer service skills.
- Knowledge of safe food handling practices.
- Skilled in production, and presentation of high quality food for meals, concessions and receptions for large quantities.
- Skilled in reading, mathematics, and written and verbal communication.
- Ability to effectively communicate verbally and in writing.
- Ability to exercise flexibility and work under pressure to meet deadlines in a fast paced environment with frequent interruptions.
- Ability to monitor and/or maintain quality control standards.
- Ability to stand for extended periods of time and lift a minimum of 40 lbs.
- High School Diploma or GED
- Cooking/Prepping experience necessary
- Safe food handler certification preferred, or certification obtained within 30 days of hire.
General Maintenance Technician
Position Overview: Assists in the maintenance of the facility in high volume operations of the Fredericksburg Expo and Conference Center to provide a safe, clean and comfortable environment for guests, staff and visitors.
Maintenance Technician - Essential Duties & Responsibilities
May be required to respond to critical issues on a 24/7 basis. Employee may be required to sit, bend, stoop, see, talk and hear. Will regularly lift medium to heavy objects. Equipment commonly used includes: ten to thirty foot scissor lift, fork lift, push lawn mower, weed eater, leaf blower, weed sprayer, golf cart, rolling cart, stock chaser, extension ladder, step ladder, ship ladder and recycling bailer.

Maintenance Technician - Essential Duties & Responsibilities
- Diagnoses technical and mechanical problems and makes repairs as appropriate.
- Responsible for maintenance and beautification of facility and grounds, including: Painting, drywall, carpet repair and replacement, high ceiling tile lighting replacements, rooftop maintenance, FF&E maintenance and repair, lawn and garden upkeep, parking lot operations, snow and ice clearing, pressure washing.
- Conducts scheduled maintenance throughout physical plant and for all equipment.
- Maintains and tests the emergency power system to ensure availability of power to all entrances, exits, fire detection alarms and extinguishing equipment, and support systems.
- Maintains all essential equipment (e.g., basic HVAC equipment, kitchen and food and beverage refrigerators and freezers, etc.) in a safe operating condition.
- Performs other duties as assigned.
- Provides operational support to show and event operations.
- Minimum high school diploma or equivalent required.
- At least three (3) year physical plant and equipment experience in a commercial environment.

Part-time Wait Staff
The Server will play a major role in ensuring a pleasant experience for guests who attend catered breakfasts, coffee breaks, luncheons, dinners, receptions and other organized group affairs involving food
and beverage service. They may serve as few as ten or as many as hundreds of guests. Style of service may range from casual to formal, involving passed cocktails and hors d’oeuvres, buffets or highly-coordinated multi-course meals in which each guest is served at the same time.
The Server will actively participate in the preparation, set-up, service, break-down and cleanup of catered functions. Their highest priorities will be to support overall profitability and guest satisfaction by providing
exceptional customer service while maintaining the facilities standards for safety, cleanliness, and sanitation.
Requirements: Follow all facility uniform and grooming standards. Attend pre-shift meetings and follow instructions from Banquet Captains and management; Ask questions to ensure clear and complete
understanding of event flow, needs and assignments. Follow stablished procedure for time and attendance and taking assigned meal breaks. Apply consistent focus on the customer and pay close
attention to detail in the performance of all tasks. Participate in and foster positive team relations with
wait staff, fellow servers, bartenders and management. Greet each guest who enters Banquet areas; Be
courteous and professional in all interactions; Demonstrate facility standards for guest service. Perform
other related duties, tasks and responsibilities as required from time to time. Collect and deliver necessary supplies to event site as directed. Take care in the handling and storage of all catering hardware, equipment, linens and serving supplies needed for catering setup and event service. Deliver
food and drinks to guests in a prompt and accurate manner based on established menus and event
specifications. Provide special attention to the head table or VIP tables, as assigned. Demonstrate a
thorough knowledge of menus and food and beverage offerings. Take initiative in fulfilling special guest
requests and be creative in resolving guest challenges and complaints; Involve a supervisor when previous methods have been unsuccessful. Follow all state and local guidelines for responsible alcoholic
beverage service; Check identification of guests to verify age requirements for consumption of alcohol.
Communicate as necessary with Catering Sales team, Kitchen, Stewarding, and Beverage departments.
Ensure the disposal or safe storage of leftover event food as prescribed by the management or Chef. Confer with management regarding problems or issues in a timely manner so as not impact service or

Responsibilities

- Participate in all aspects of the conversion process for events. Duties may include setting-up and tearing down flooring, portable chairs, barricades, staging, tables, other furnishings and equipment
- Work extended and/or irregular hours including nights, weekends and holidays, as needed
- Meet the physical demands of this job, which include being able to get in and around the facility (requires personal mobility), lifting, carrying, moving, climbing, working from various heights, and moderate to loud noises
- Operate equipment such as light trucks, pallet jacks, forklifts, boom lifts or other light power driven equipment
- Follow oral and written instructions and communicate effectively with other in both oral and written form
- Organize and prioritize work to meet deadlines
- Work effectively under pressure and/or stringent schedule and produce accurate results
- Maintain an effective working relationship with clients, other employees, and patrons encountered in the course of employment
